You Will Need:
- 3/4 cup white flour
- 3/4 cup wholemeal flour
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda (baking soda)
- 3/4 cup soy milk
- 1 cup brown sugar
- 3 slightly overripe, large mashed bananas
- 1/8 cup sunflower oil
- 1/2 chopped dates
- 1/2 cup chopped walnuts
- 1/4 tsp sea salt
- Egg replacer equivalent to 1 egg
- 1 tsp vanilla essence
- 1/2 tsp cinnamon
Banana Cake
Lovely and moist and great served with Banana Cream.
Directions:
- Sift flours into large bowl and add baking powder and bicarbonate of soda. Make a hole.
- Mash bananas in another bowl and add sugar, vanilla, cinnamon, salt and oil.
- Prepare egg replacer (as per instructions from manufacturer) in another bowl.
- Chop dates and walnuts.
- Pour banana mixture and soy milk into the flours and blend in.
- Then add the egg replacer mixture, walnuts and dates and blend.
- Pour final mixture into an oiled and floured cake tin.
- Bake at 250C for an hour or until skewer comes out clean.
- Cover with your favourite icing, or for something different try Banana Cream!
