Spinach and Lentil Soup

You Will Need:

  • 2 med onions
  • 1 teaspoon turmeric
  • I teaspoon ground cummin
  • 2 teaspoons ground coriander
  • I litre pack of vegetable stock (4 cups)
  • 4 cups water
  • 2 cups red lentils
  • 1 pack of frozen spinach (could also use fresh)
  • Salt and pepper

Spinach and Lentil Soup

This recipe is quick and easy using ingredients that you would have in the cupboard and freezer. It is also vegan and very healthy!



Lemon rind can be added when cooking and lemon juice when cooked. Fresh coriander can also be added after cooking.

Soup left for the next day often thickens and can be eaten as a dahl with rice.
