Chilli Con "Carne" / Salsa
This colourful dish is full of flavour and versatile in presentation.
Ingredients
- 1 onion
- 1 clove of organic garlic
- 2 capsicums
- 2 celery sticks
- 1 carrot
- 1 can of chopped tomato
- 1 can of kidney beans
- 1 cup of veg stock
- 1 teaspoons of chilli powder
- Coriander
- oil for frying
Directions
- Chop onion and garlic and fry until soft.
- Add chopped carrot, capsicum, celery and chilli powder, stir until soft.
- Add tomatoes, stock and beans.
- Simmer for 30 minutes.
- Serve as soup with fresh coriander, OR with corn chips and sliced avocado, OR on a bed of rice for a heartier meal.
