Vegetable Pakoras

Healthy vegetables cooked in a way to satisfy cravings for junk food!


  • 1 cup of besan flour
  • ateaspoon of ground coriander
  • 1 teaspoon of salt
  • a teaspoon of ground turmeric
  • a teaspoon of chili powder
  • a teaspoon of garam masala
  • 1-2 cloves of garlic, crushed
  • a cup of water
  • a cauliflower and broccoli, cut into small florets
  • Pumpkin, sliced
  • 2 onions, sliced into rings
  • 4 mushrooms, cut into 1/4
  • Oil for deep frying


  1. Sift flour, add coriander, salt, turmeric, chili powder, garam masala and garlic.
  2. Make well in the centre and gradually add water to form a thick, smooth batter.
  3. Coat vegetables in batter.
  4. Cook for 4 to 5 minutes in oil 1 1/2inches deep. Drain on paper.


    Any vegetables can be used. Frozen might be quicker.
    Pakoras go really well with chili sauce or a mint raita made out of soy yoghurt, mint, lemon juice and coriander.
