Delicious Apple Cinnamon Muffins
These moist vegan muffins are perfect for breakfast or a mid afternoon snack that satisfies any sweet tooth's cravings, minus the added fat.
Ingredients
- 2 cups of plain whole wheat flour
- 2 teaspoons of baking powder
- 2 1/2 teaspoons of ground cinnamon
- 1/2 a cup of brown sugar
- 1 1/2 cups of low fat soy milk
- 2 medium apples, peeled, cored and chopped
- 1/2 a cup of rolled oats
- 1/2 a cup of chopped cashews
- All natural maple syrup for topping.
Directions
- Preheat oven to 180C
- Place patty pans into muffin tins
- Combine all the dry ingredients in a medium sized bowl, mix well
- Add the apple and soy milk
- Fill the muffin patty pans two-thirds full. Bake for 20 to 25 minutes, or until slightly raised and lightly browned
- While still warm, drizzle the maple syrup over the muffins for a yummy topping.
