Banana Cake

Lovely and moist and great served with Banana Cream.


  • 3/4 cup white flour
  • 3/4 cup wholemeal flour
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda (baking soda)
  • 3/4 cup soy milk
  • 1 cup brown sugar
  • 3 slightly overripe, large mashed bananas
  • 1/8 cup sunflower oil
  • 1/2 chopped dates
  • 1/2 cup chopped walnuts
  • 1/4 tsp sea salt
  • Egg replacer equivalent to 1 egg
  • 1 tsp vanilla essence
  • 1/2 tsp cinnamon


  1. Sift flours into large bowl and add baking powder and bicarbonate of soda. Make a hole.
  2. Mash bananas in another bowl and add sugar, vanilla, cinnamon, salt and oil.
  3. Prepare egg replacer (as per instructions from manufacturer) in another bowl.
  4. Chop dates and walnuts.
  5. Pour banana mixture and soy milk into the flours and blend in.
  6. Then add the egg replacer mixture, walnuts and dates and blend.
  7. Pour final mixture into an oiled and floured cake tin.
  8. Bake at 250C for an hour or until skewer comes out clean.
  9. Cover with your favourite icing, or for something different try Banana Cream!
