Spinach and Lentil Soup

This recipe is quick and easy using ingredients that you would have in the cupboard and freezer. It is also vegan and very healthy!


  • 2 med onions
  • 1 teaspoon turmeric
  • I teaspoon ground cummin
  • 2 teaspoons ground coriander
  • I litre pack of vegetable stock (4 cups)
  • 4 cups water
  • 2 cups red lentils
  • 1 pack of frozen spinach (could also use fresh)
  • Salt and pepper


  1. Fry the diced onions in olive oil.
  2. Add spices on low gas and stir and cook for 1 minute.
  3. Add lentils and stir and cook for 1 minute.
  4. Add stock and water.
  5. Cook for 30 minutes
  6. Add frozen spinach and cook for further 10 minutes
  7. Season and serve
