Spinach and Lentil Soup
This recipe is quick and easy using ingredients that you would have in the cupboard and freezer. It is also vegan and very healthy!
Ingredients
- 2 med onions
- 1 teaspoon turmeric
- I teaspoon ground cummin
- 2 teaspoons ground coriander
- I litre pack of vegetable stock (4 cups)
- 4 cups water
- 2 cups red lentils
- 1 pack of frozen spinach (could also use fresh)
- Salt and pepper
Directions
- Fry the diced onions in olive oil.
- Add spices on low gas and stir and cook for 1 minute.
- Add lentils and stir and cook for 1 minute.
- Add stock and water.
- Cook for 30 minutes
- Add frozen spinach and cook for further 10 minutes
- Season and serve
