Sheree's Bean Mix Thing

Quick, easy, yummy, good for you soul food. Versatile, as you can do different versions - Indian, Italian, Thai...


  • 1 can chick peas
  • 1 can red beans
  • 1 can butter beans
  • 1 can lentils (all drained)
  • 2 cans diced tomatoes
  • 2 onions diced
  • Garlic (your quantity) crushed
  • Cumin (your qty-be generous)
  • Your fave Indian curry paste (your qty)
  • Chopped fresh herbs of your choice.
  • Small can corn kernels
  • Cooked rice (your qty)


    Basic Version
    • Slow cook onion and garlic in generous amount of oil (rice bran plus sesame is good) until translucent and gooey.
    • Add cumin and stir.
    • Add curry paste, cook and stir for a minute.
    • Add all canned stuff and stir.
    • Slow simmer for 5 mins.
    • Stir in chopped herbs.
    • Stir corn kernels through your hot cooked rice.
    • Serve bean mixture over the rice.
    Italian Version
    • Cook the onion and garlic in olive oil.
    • Substitute oregano for cummin.
    • Use your fave Italian concentrated pasta paste instead of curry paste.
    • Add half a jar of roasted capsicum strips to mixture.
    • Stir in generous qty of chopped Italian parsley at the end.


    Where quantities are not specified, use your own judgement. You can experiment with any other additions you think might work!
