Kale & Avocado Salad
This simple and delicious salad is addictive, reminicient of eating potato chips but without the bad stuff!
Ingredients
- 1 bunch Scotch kale
- 1/2 cup fresh lemon juice
- 1 tsp sea salt
- 1 tsp cayenne
- 1 tbsp olive oil
- 1-2 Tomatoes, diced
- 1-2 Avodacos, soft and creamy
Directions
- Wash the kale thoroughly and tear bite size pieces into a bowl.
- Add salt and scrunch in to wilt the kale. Add olive oil, cayenne and lemon until the kale is soft and squishy!
- Add avocado and scrunch in with your hands - you get the double bonus of a good hand moisturiser!
- Lastly add the diced tomato and either squish or toss it through the salad.
