Kale & Avocado Salad

This simple and delicious salad is addictive, reminicient of eating potato chips but without the bad stuff!


  • 1 bunch Scotch kale
  • 1/2 cup fresh lemon juice
  • 1 tsp sea salt
  • 1 tsp cayenne
  • 1 tbsp olive oil
  • 1-2 Tomatoes, diced
  • 1-2 Avodacos, soft and creamy


  1. Wash the kale thoroughly and tear bite size pieces into a bowl.
  2. Add salt and scrunch in to wilt the kale. Add olive oil, cayenne and lemon until the kale is soft and squishy!
  3. Add avocado and scrunch in with your hands - you get the double bonus of a good hand moisturiser!
  4. Lastly add the diced tomato and either squish or toss it through the salad.
