Fat-Free Banana Pancakes
There is no oil in the batter and no sugar. These wholesome pancakes are a perfect Sunday morning breakfast!
Ingredients
- 1 1/4 cups wholemeal spelt flour
- 1/4 cup soy flour
- 1 1/2 tsp baking powder
- 1/2 tsp bicarb soda (baking soda)
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 2 banana's - mashed
- 1 1/2 cups soy milk (fat-free if you want)
- 1 tsp apple cider vinegar
- 1 1/2 tbsp apple sauce
- 1 tsp vanilla extract
Directions
- Combine soy milk and vinegar a sit to the side for 5 minutes
- Sift dry ingredients into a bowl
- In a separate bowl, mix banana, apple sauce, vanilla and soy milk together until fairly smooth
- Pour wet ingredients into the dry ingredients and mix until just combined
- Leave to sit for 15mins
- Mix in enough water to reach desired batter consistency (try adding up to about 1/4 cup more if the pancakes are still rather thick)
- Spray a non-stick fry pan with cooking spray and pour about 1/4 cup batter into the pan (depending on your pan size, you may comfortably fit about 3 small pancakes into the pan)
- Flip pancakes when bubbles appear on the surface. Cook another 1-2 minutes until pancakes are golden brown on both sides.
