Overnight Oats

Summer alternative bircher style museli.

Ingredients

  • 1 and a 1/2 cups of rolled oats
  • Juice and zest of 1 orange
  • 1 apple, grated
  • Milk ( soy, rice, oat, almond)
  • Vegan yogurt (any flavour you like; Soy Life)
  • Ground flaxseeds or chia seeds
  • Cinnamon
  • You choose: currants, sultanas, dates, dried apricot, chopped raw almonds

Directions

  1. The night before you want this for breakfast mix together the rolled oats, orange juice and zest, a couple of tablespoons of vegan yogurt, a tablespoon or two of chia seeds or ground flaxseeds, the grated apple, whichever dried fruits you like, and a teaspoon of cinnamon.
  2. This will be a very dry and crumbly mix, so add enough milk to cover (at a minimum) and more if you like a less dense muesli texture. Bear in mind that you can add more nilk later, so don't go crazy at this stage.
  3. Stir again, cover, and leave overnight in the fridge.
  4. In the morning, take it out and give it a good stir. Depending on how firm or spoonable you like your muesli, add more nilk.
  5. To serve, put a good serving of the oat mix into a bowl, top with more milk, a spoonful of vegan yogurt, chopped dates and almonds, and a sprinkle more cinnamon.
