Orange Tahini Chia Pudding

An omega rich, healthy and filling cereal alternative.


  • 2 Tablespoons Chia Seeds
  • 3/4 Cup Orange Juice, fresh if possible
  • 3/4-1 tspn Tahini
  • 1/4 tspn Ginger, grated
  • 1/3 Vanilla Bean Pod, insides only
  • 4 Pinches Cinnamon
  • 1/8-1/4 tspn Coconut Palm Sugar (also known as coconut crystals)
  • 2 Pinches Salt


  1. Create a paste by mixing together the tahini, ginger, vanilla, cinnamon, coconut sugar and salt. This will help ensure that the ingredients are distributed evenly.
  2. Add the chia seeds & orange juice. You will need to stir/whisk gently for a few minutes to break up any lumps that form. After that, you can leave the pudding to thicken for 20 minutes, agitating with a spoon or fork 2-3 times.
  3. Serve with extra coconut sugar springled on top, orange segments and a little orange zest. The coconut sugar will instantly liquefy and become caramelly.
  4. TIPS
    • If you sleep in often like I do, this is the perfect breakfast for you. You can leave it in the fridge overnight and it'll be fine to eat in the morning.
    • If you don't stir this enough, you'll be in trouble. There will be lumps and your flavours won't be distributed evenly.
