Raw Chocolate Superfoods Brownie
Delicious, decadent and packed full of healthy ingredients!
Ingredients
- 1 1/2 cups coconut
- 1 cup rolled oats
- 3 tblsp black chia seeds
- 2 tblsp maca powder (optional)
- 2 tblsp dutch dark cocoa powder
- 4 heaped tblsp raw cacao powder
- 7 scoops stevia powder
- 11/2 cups almond or soy milk
- 12/3 cups walnuts
- 1 large handful pitted dates
- 2 cups dried fruit medley -- chopped apples, apricot & sultanas or 3 cups of chopped dried fruit of your choice.
- 2 tbslp unhulled sesame seeds
Directions
- Place dates into the food processor and pulse until chopped, add all the other ingredients except for the milk, sesame seeds and dried fruit medley.
- Pulse until combined, add the milk and pulse until mixed well. The mixture should be damp and quite stiff.
- Tip the mixture into a large bowl and add the dried fruit, mix by hand until completely incorporated.
- Line a small lamington tin with baking paper and press the mixture into the tin. Sprinkle the top with un-hulled sesame seeds and press down.
- Chill for at least 2 hours before slicing or better still overnight in the fridge. These brownies improve over a few days and will last for a week in the fridge (that is if everyone can control themselves!) Enjoy.
