Mac 'n' Cheeze
This is a healthier twist on the traditional Macaroni and Cheese dish.
Whether served as a side dish or a main meal, its devourers will come back wanting more!
Ingredients
Cheeze sauce
- 1tbsp garlic powder
- 1 tbsp paprika (mild)
- 2 tsp mustard powder
- 2 tsp salt
- 85gm tofu
- 1 cup water
- 1 1/2 cups soy milk
- 1 cup vegetable oil
- 2 tbsp oil for cooking
- 1/3 cup soy sauce
- 1 1/4 cups savoury yeast/nutritional yeast
- 680gm elbow macaroni pasta
Veggies (optional)
- 1 red capsicum
- 225gm button mushrooms
- 6 medium shallots
Directions
- Cook and drain pasta and place evenly in a large oven casserole dish
- Blend sauce ingredients in a blender until smooth. Sauce will be quite runny and a yellow/orange colour, but will thicken when cooked
- Pre-heat oven to 180C
- Slice vegetables, pan fry with vegetable oil until just soft then spread evenly over pasta
- Pour blended sauce slowly and evenly over pasta/veggie mix
- Cook in oven for 20-35 mins
