Mac 'n' Cheeze

This is a healthier twist on the traditional Macaroni and Cheese dish. Whether served as a side dish or a main meal, its devourers will come back wanting more!


Cheeze sauce
  • 1tbsp garlic powder
  • 1 tbsp paprika (mild)
  • 2 tsp mustard powder
  • 2 tsp salt
  • 85gm tofu
  • 1 cup water
  • 1 1/2 cups soy milk
  • 1 cup vegetable oil
  • 2 tbsp oil for cooking
  • 1/3 cup soy sauce
  • 1 1/4 cups savoury yeast/nutritional yeast
  • 680gm elbow macaroni pasta
Veggies (optional)
  • 1 red capsicum
  • 225gm button mushrooms
  • 6 medium shallots


  1. Cook and drain pasta and place evenly in a large oven casserole dish
  2. Blend sauce ingredients in a blender until smooth. Sauce will be quite runny and a yellow/orange colour, but will thicken when cooked
  3. Pre-heat oven to 180C
  4. Slice vegetables, pan fry with vegetable oil until just soft then spread evenly over pasta
  5. Pour blended sauce slowly and evenly over pasta/veggie mix
  6. Cook in oven for 20-35 mins
