Easy Lentil & Veggie Patties

You Will Need:

  • Half cup red lentils
  • One cup of water
  • Enough raw vegetables to make up approx 2-3 cups of vegetables when mashed (pumpkin, potato, broccoli, cauliflower that sort of thing)
  • One cup of Breadcrumbs
  • Oil for shallow frying

Easy Lentil & Veggie Patties

Easy peasy! These patties are great for main meals, lunches or snacks. They taste great and are so healthy!

Variation:

Make these patties your very own by adding your own favourite ingredients, or try freshly minced garlic, spring onions and fresh corn kernels (cut directly off the cob) to the vegetable mix. Gives it that extra kick!
