Spicy Lentil Hotpot

You Will Need:

  • 2 cups of potato
  • 2 cups of pumpkin
  • 1 cup of sliced green beans
  • 1 can of tomatoes
  • 3/4 of a cup of red lentils
  • 2 vegetable stock cubes
  • 2 cups of water
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1/2 a teaspoon of turmeric
  • 1 teaspoon of fresh/crushed ginger
  • 1 teaspoon of crushed garlic

Spicy Lentil Hotpot

Very healthy with lots of veggies and lentils - Satisfying mix of carbs and protein! No fat and delicious!

Directions:

Variation:

1. Use sweet potato in place of potato or do half of each.
2. Put in  1 1/2 teaspoons of the spices for an even spicier hit or lessen the amount from 1 teaspoon for a lightly flavoured hotpot.
3. Use any green vegetable in place of green beans.
