Broccoli & Leek Soup
It is quick easy, healthy and happy.
Ingredients
- 1 Tablespoon of Olive Oil
- 1 Sliced Leek
- 2 Potatoes
- 500g of Broccoli
- 2 Ltrs Vegetable Stock
Directions
- Heat oil in saucepan
- Cook leeks until soft
- Add potatoes and broccoli
- Cook for 2 minutes
- Add stock
- Bring to boil
- Simmer uncovered for 15 minutes or until potatoes are tender
- Cool then blend in batches
- Reheat and serve
