Delicious Apple Cinnamon Muffins

These moist vegan muffins are perfect for breakfast or a mid afternoon snack that satisfies any sweet tooth's cravings, minus the added fat.

Ingredients

  • 2 cups of plain whole wheat flour
  • 2 teaspoons of baking powder
  • 2 1/2 teaspoons of ground cinnamon
  • 1/2 a cup of brown sugar
  • 1 1/2 cups of low fat soy milk
  • 2 medium apples, peeled, cored and chopped
  • 1/2 a cup of rolled oats
  • 1/2 a cup of chopped cashews
  • All natural maple syrup for topping.

Directions

  1. Preheat oven to 180C
  2. Place patty pans into muffin tins
  3. Combine all the dry ingredients in a medium sized bowl, mix well
  4. Add the apple and soy milk
  5. Fill the muffin patty pans two-thirds full. Bake for 20 to 25 minutes, or until slightly raised and lightly browned
  6. While still warm, drizzle the maple syrup over the muffins for a yummy topping.

Variation

    Almonds, banana, coconut, bran, sultanas or berries can be added/substituted in this recipe.
