Baked Vegies (with a difference)

So tasty you'll want more and more. You just can't stop eating them!


  • Any veggie suitable for baking, including beetroot - it's yummy!
  • Olive oil
  • Balsamic vinegar
  • Brown sugar


  1. Heat oven at 200C.
  2. Peel all vegetables and cut into bite size pieces
  3. Place in an ovenproof baking dish
  4. Sprinkle with a good splash of olive oil and balsamic vinegar
  5. Sprinkle with a good serve of brown sugar making sure all veggies are covered
  6. Bake for about 20 mins
  7. Carefully mix the veggies through the juices in the pan and cook for a further 20 mins
