Mushroom Stroganoff

It tastes awesome, warming and is a lovely winter dish!

Ingredients

  • 1 pkt Lamyong Mushroom chunks chopped up
  • 1 large onion
  • 250g mushrooms chopped
  • 200ml tin coconut cream (lite)
  • 1/2 cup vege stock
  • olive oil
  • 2 tablespoon tomato paste

Directions

  1. Heat oil in pan
  2. add mushroom chunks and cook through to release flavour
  3. Take off heat and put aside.
  4. Fry onions and add mushrooms
  5. Add tomoato paste and stir through
  6. Add vege stock and coconut milk
  7. Stir all together
  8. Add Mushroom chunks and simmer for 10 minutes

Variation

    Add more vegies like carrots and broccoli perhaps!
