Golden roasted chickpeas with garlic and crispy sage leaves

Delicious, savoury little bites, perfect for cocktail party nibbles or as a popcorn alternative while lounging on the couch watching movies.

Ingredients

  • 2 tins chickpeas, drained and rinsed
  • 3-4 tablespoons of olive oil
  • 5-6 cloves of garlic, whole and unpeeled
  • a few fresh sage leaves
  • a few pinches of salt and freshly ground black pepper
  • Lemon wedges, to serve

Directions

  1. Preheat the oven to around 220 degrees C. Pop a tray into the oven to preheat as well.
  2. Heat the olive oil in a heavy frying pan, then add the chickpeas. Cook, stirring occasionally, for a minute or two. Add the garlic cloves, and stir constantly until aromatic. (About 20-30 seconds). Take the frying pan off the heat, and add the sage leaves. Stir to coat them in the oil.
  3. Pour the chickpea, garlic and sage mixture onto the preheated tray. Roast until the chickpeas turn golden. About 15-20 minutes. Take the tray out of the oven once or twice, and give the chickpeas a stir to prevent sticking.
  4. Remove from the oven and sprinkle with the salt and fresh pepper, then pour into a serving dish. Serve with lemon wedges on the side. (The roasted garlic will be creamy and mild - pop straight out of the skins for a flavour hit!)

Variation

    Sprinkle with a little apple cider vinegar for a sour hit, or dust with paprika and onion before roasting for a 'potato wedges' flavour.
