Pumpkin Soup

It's delicious, healthy and easy to make.


  • 1 leek, sliced
  • Pumpkin, peeled, clean and cuted into small cubes
  • 1 small potato, peeled, clean and cuted into small cubes
  • Vegetable stock
  • 2 tablespoons of tomato puree
  • Salt
  • Olive oil


  1. In a saucepan with olive oil, cook garlic and leek for five minutes.
  2. Add the pumpkin and tomato puree. Cook two more minutes.
  3. Add the potato.
  4. Cover with vegetable stock and, if needed, salt.
  5. Bring to a boil and then simmer for about twenty minutes, or until the vegetables are tender.


    If you want the soup as a main course, you can add more liquid and noodles or another kind of pasta.
    And, of course, you can add more vegetables (spinach or kale are great).
