"Baked" Beans

An easy baked beans recipe (that isn't really baked) is the perfect comfort breakfast.

Ingredients

  • 1/2 Brown Onion, finely diced
  • 1 Garlic Clove, finely chopped
  • 1x 400g Tin Mixed Beans, drained
  • 1x 400g Tin Diced Tomatoes
  • 1 Cup Passata (cooked tomato puree)
  • 1 - 1 1/2 tsp Wholegrain Mustard
  • 1/4 tsp of each of the following dried herbs: thyme, basil, oregano & rosemary - OR 3/4-1 tsp dried Italian herb mix
  • 2 T Fresh Parsley, minced
  • Up to 1 1/2 tsp Raw Sugar or Coconut Palm Sugar
  • A Splash of Lemon Juice
  • Salt, Herbamare or Vegetable Stock Concentrate to taste
  • Pepper to serve
Optional Extras:
  • 1/2 tsp Vegan Worcestershire Sauce*
  • 2 tsp Smoked Paprika + 2 pinches Cayenne Pepper
  • A Splash of Liquid Smoke
  • A Splash of Hot Sauce

Directions

  1. Saute the onion & garlic in a large pot with a splash of oil on medium heat.
  2. When the onion is soft and translucent, add all other ingredients except parsley and stir to heat through. Cook on the stove for 5-10 minutes to reduce some of the liquid from the tinned tomatoes.
  3. Stir through the parsley & serve with some cracked pepper! Yep, it's that easy.
  4. TIPS
    • Most store bought worcestershire sauces contain anchovies, so be sure to check the labels... or have a go making your own from scratch!
